Homemade pumpkin soup always tastes so much better! It’s fresh, healthy and you know exactly what’s in it.

A warm meal perfect for cooler months and when I want a strong immunity boost.

Pumpkin Soup Ingredients:

  • Pumpkin

  • Carrot

  • Garlic

  • Ginger

  • Onion

  • Nutmeg

  • Cinnamon

  • Tumeric

  • Manuka honey

  • Vegetable broth (I love the Nutra organics one)

  • Plant-based milk (I use almond)

  • Salt & pepper

Instructions:

  • Roast pumpkin, carrot, ginger and garlic with spices

  • Fry onion in pan until brown

  • Add vegetable broth to pan and simmer

  • Add all ingredients to a blender (roasted veg and onion/broth mix)

  • Blend until your preferred consistency

  • Option to serve with sourdough.
